2 lbs. carrots, pared and sliced diagonally
boiling water
1 tsp. salt
1/2 cup brown sugar
8 1/2 oz. crushed pineapple
Place carrots and salt in a sauce pan. Cover with 1 inch
of boiling water. Bring to a boil and simmer until tender.
Drain very well. Add brown sugar and pineapple. Cook,
stirring constantly, over high heat for 5 minutes or until
carrots are glazed. Makes 8 servings.
