Honey Crusted Baked Tomatoes
8 medium tomatoes
1/2 cup coarse bread crumbs
2 teaspoons salt
2 teaspoons ground black ground pepper
1 Tablespoon dried tarragon
4 teaspoons honey
4 teaspoons butter
Preheat oven to 350. Butter an oblong baking dish.
Slice off stems ends of tomatoes and carefully scoop out the seeds only. Place open side up on buttered baking dish.
Mix the bread crumbs with salt pepper and tarragon. Drizzle the honey over the tomatoes, rubbing it down inside the cavity.
Sprinkle the crumb mixture into the cavity and dot with butter.
Bake, uncovered, for 30 minutes.
Place under broiler that last 5 minutes, until it begins to brown. Serve hot.
Makes 8 servings.
