3 cups coarsely chopped onions, (3 large onions)
1/2 teaspoon poultry seasoning
1 1/2 tablespoons butter
1 1/2 tablespoons flour
1 1/2 cups milk
3/4 cup dry, fine, unseasoned dry bread crumbs
2 eggs, yolks and whites separated
salt and pepper
chopped parsley for garnish
Recipe
Preheat oven to 350. Butter a 1 1/2 quart baking dish.
Beat the egg whites until stiff peaks form. Set aside.
Lightly beat the yolks and set aside.
Place onions and poultry seasoning in a small amount of
salted water.
Bring to a boil and boil until tender. Drain.
In another saucepan, melt butter and stir in the flour.
Gradually add the milk.
Stirring constantly, cook until thickened.
Add the onions, 1/2 cup of the bread crumbs, and the
egg yolks.
Season with salt and pepper.
Fold in the egg whites.
Turn into the baking dish.
Sprinkle with the remaining 1/4 cup bread crumbs.
Bake for about 35 - 45 minutes, or until set.
Sprinkle with chopped parsley.
Makes 4 servings.
