Potatoes, baked, cubed, Italian style

5 medium potatoes
3/4 cup butter
1/2 cup grated Parmesan cheese
1 cup Italian bread crumbs
1/2 cup finely chopped onion
Heat oven to 325 degrees F.
Peel and dice potatoes into 1 1/2 inch cubes.
Melt 1/2 cup butter.
Cool and pour into a plastic bag.
Add potatoes, bread crumbs and onion.
Shake until potatoes are evenly coated.
Line a 14 x 10 inch baking pan with foil.
Pour potatoes evenly into pan.
Dot with remaining 1/4 cup butter over potatoes.
Sprinkle with Parmesan cheese, salt and pepper.
Bake, uncovered, until potatoes are soft.
Serves 6 to 8.
