Kohlrabi + Carrots, marinated
6 small kohlrabi peeled and cut into matchsticks
3 medium carrots peeled and cut into matchsticks
1/2 cup Olive oil
2 Tablespoons fresh lemon juice
2 Tablespoons sherry vinegar
1 teaspoon sugar
1 Tablespoon capers rinsed and drained
1/2 teaspoon dried thyme
salt and pepper
Cook kohlrabi and carrot in boiling water for 2 minutes.
Drain well and place in a jar or bowl.
Whisk together remaining ingredients then pour over vegetables.
Cover and refrigerate 48 hours stirring vegetables occasionally.
Drain some of the marinade before serving.
Makes 6 servings.
