Lima Beans, baked, Mom's
1 - 1 1/2 pounds large Lima beans,
1 - 1 1/2 pounds bacon, crisply fried and crumbled,
...grease reserved
1 cup dark brown sugar
1, 8 ounce can tomato sauce
1 medium chopped onion
Soak lima beans and cook according to directions until just tender.
Season to taste while cooking. Drain and set aside.
Drain most of the bacon grease from the pan.
Saute the onion in the grease until lightly browned.
Add the brown sugar. Stir and cook until the sugar is dissolved.
Add the tomato sauce and season to taste. (maybe a little
Worcestershire and hot sauce.
Add the bacon and cook for 7 - 10 minutes or until flavors blend.
Preheat oven to 350 degrees F.
Mix the sauce and beans together and pour into a baking dish.
Bake for about 1 hour.
