2 cups potatoes , mashed
1 cup cheddar cheese , old,cubed
1 medium onion , sweet, minced
1/4 cup breadcrumbs
4 tablespoons grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
5 tablespoons butter, cubed
Recipe
Preheat oven to 350 degrees F.
Coat well, a baking dish with Olive oil or cooking spray.
Spread potatoes in dish.
Pressed cheese into potatoes at intervals.
Sprinkle onion on top.
Then sprinkle bread crumbs, Parmesan cheese, salt
and pepper.
Top with butter.
Bake for 30 - 45 minutes.
Notes:
Try adding 3 slices lightly cooked and crumbled bacon,
or 1 clove minced garlic,
or 1 cup shredded Swiss cheese, Jarlsberg cheese, Monterey
Jack cheese on the top before the butter
or sprinkle with some fresh herbs.
