Mashed Potato Puffs, baked
4 cups mashed potatoes
1/4 cup unsalted butter
1/2 cup milk
2 eggs, yolks separated from whites
...whites beaten until peaks form
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1/4 cup grated Parmesan cheese
Combine butter and milk in a saucepan, over a medium
heat. Stir until butter meltsl. Remove from heat. Stir
in potatoes. Beat in egg yolks. Season to taste with
salt and pepper. Fold in egg whites.
Preheat oven to 350 degrees F. Butter baking sheet.
Drop potato mixtaure by tablespoonfulls onto baking
sheet. Sprinkle with cheese and bake for 30-40 minutes,
until puffy and golden. Serve hot.
