Mashed Potatoes, w Sage + Onion
2 1/2 pounds baking potatoes, (such as russet),
...peeled and cut into 1 inch pieces
2 medium onions, cut into thin wedges
1/2 cup water
1/4 cup Olive oil or vegetable oil
1 teaspoon salt
1 teaspoon ground sage or 1 1/2 tsps. poultry seasoning
1/2 to 1/4 teaspoon ground black pepper
1/4 to 1/3 cup buttermilk, plain yogurt,
...sour cream, or milk
Heat oven to 450 degrees F. Grease a 3 quart casserole.
Mix the potatoes and onions together in the casserole.
Combine water, oil, salt, sage, and pepper in a 1 quart
glass measuring cup.
Drizzle over potato mixture. Toss to coat.
Bake, uncovered, for 1 hour or until tender, stirring twice.
Remove from oven and use a hand potato masher to
coarsely mash.
Beat to desired consistency,
Warm the buttermilk and gradually stir in to desired
smoothness.
Pour into a serving bowl.
Makes 8 servings.
