Potatoes, roasted, w/Red Peppers
2 1/2 poinds potatoes, cubed
2 red sweet bell peppers, cut into 1 inch pieces
2 cloves garlic, minced
2 medium yellow onions, chopped coarsely
2 green onions, including green tops, chopped
2 teaspoons dried oregano, or 2 Tablespoons freshly chopped
2 teaspoons dried majoram, or 2 Tablespoons freshly chopped
2 teaspoons dried rosemary, or 2 Tablespoons freshly chopped
1/2 cup extra light Olive oil
1/2 teaspoon ground black pepper
1/2 teaspoon salt
Heat oven to 375 degrees F.
1. In large bowl combine:
potatoes, red peppers, garlic, onions, green onions, oregano,
marjoram, rosemary, oil, pepper and salt. Mix well.
2. Line a broiler pan with aluminum foil and oil lightly.
Place the potato mix evenly in the pan.
3. Bake in heated oven for 40 minutes, stirring gently twice
during baking time.
