Pizzad Potatoes
1 package scalloped potatoes (box mix)
1, 16 ounce can tomatoes, chop or crush
1 1/2 cups water
1/4 teaspoon oregano leaves
1, 4 ounce package sliced pepperoni
1, 4 ounce package shredded Mozzarella cheese
Heat oven to 400 degrees.
Empty potato slices and packet of sauce mix into ungreased
2 quart baking/casserole dish.
Heat tomatoes, water and oregano to boiling.
Stir into potatoes.
Arrange pepperoni on top and sprinkle with cheese.
Bake uncovered 30 to 35 minutes.
Makes 4 servings.
Variations:
Hamburger Pizzad Potatoes
- Substitute 1/2 pound ground beef instead of the pepperoni.
Brown and drain; stir into potato mixture.
Sausage Pizzad Potatoes
- Substitute 1/2 pound bulk pork sausage, instead of the pepperoni.
Brown and drain; stir into potato mixture.
