Potato Cabbage Casserole #2
4 potatoes, boiled and sliced
1/4 cup plus 2 Tablespoons butter, separated
1 small head cabbage; chopped
2 large onions, sliced
2 cups shredded American or Cheddar cheese
1/4 cup flour
1, 13 ounce can chicken broth
In a large pan, heat the 1/4 cup butter.
Saute cabbage and onions in butter until wilted.
Place half of the cabbage, onions and potatoes in a 3
quart casserole.
Sprinkle with 1 cup shredded cheese.
Put remaining cabbage and potatoes on top.
Melt the 2 tablespoons butter in the same pan in which
the cabbage was cooked.
Whisk in the flour and cook for 1 minute.
Stir in chicken broth and cook until thickened.
Pour over top of cabbage.
Sprinkle remaining 1 cup of cheese on top.
Bake at 350 degrees F. for 45 minutes.
