1 1/2 pounds unpeeled potatoes
1/2 teaspoon salt
Water,boiling
1 1/2 cups beer (12 ounces)
1/2 pound bacon,cut into 3 inch strips
1/2 cup milk
1 cup sliced onion
6 cups cabbage, finely shredded (1.5 pounds)
2 Tablespoons flour
1 cup shredded Swiss cheese
1/2 teaspoon dried thyme
Steam whole potatoes in 1 inch boiling water for 30 to 40
minutes, or until tender.
Slice potatoes, unpeeled, into 1/2 slices; set aside.
Cook bacon in a large skillet until crisp; set aside.
Pour off all but 2 Tablespoons bacon fat.
Saute onion in same skillet until golden.
Stir in flour, thyme and salt.
Heat oven to 375 degrees F.
Gradually add beer and milk; stir, over low heat, until mixture
boils and thickens.
In 3 quart casserole, layer half the cabbage, potatoes, bacon,
cheese and sauce.
Repeat with remaining ingredients.
Cover and bake for 30 minutes.
Uncover and bake 15 minutes longer, or until cabbage is tender.
