Potato Lasagna Casserole, +other veggies
1, 10 ounce package frozen chopped broccoli, thawed
...and squeeze dried
1, 15 ounce container Ricotta cheese
1, cup finely shredded carrot
1/2 cup minced green onions
1 teaspoon dried marjoram
1 teaspoon finely ground black pepper
5 large red potatoes, peeled + thinly sliced
1 1/2 cups shredded part skim Mozzarella cheese
1/2 cup freshly grated Parmesan cheese
Preheat oven to 375 degrees F. Coat an 11x7x2 inch
baking pan with cooking spray.
Combine the broccoli, Ricotta cheese, carrots, onions,
marjoram and black pepper together in a medium bowl.
Mix well and set aside.
Place 1/3 of the potato slices in the bottom of the pan.
Top with half of the broccoli mixture.
Sprinkle with 1/2 of the Mozzarella cheese.
Repeat this once. Then end with a layer of potato slices.
Sprinkle with the Parmesan cheese.
Cover and bake for 30 minutes. Uncover and bake an
additional 15 minutes, or until tender and golden. Let set
for 10 minutes before serving.
