    Potato Pancakes

    leftover mashed potatoes
    couple of eggs
    Italian flavored bread crumbs
    oil/shortening/butter for browning

    Add to mashed potatoes until mushy.
    Add bread crumbs to the mix.
    Fry in a pan until heated thru and browned a
    little on both sides.
