Simple and tasty! 40 Minutes to Prepare and Cook
Potatoes + Tomatoes w/bacon
5 gold potatoes ( or similar )
1 cup diced tomatoes
4 Tablespoons Corn or Olive oil
10 Tablespoons bacon bits or pieces
1/2 medium size onion
1 cup Tomato sauce
Skin and cut potatoes in aproxiamtely 1 inch size cubes.
Chop onion.
Heat oven at 420 degrees F.
Use 2 tablespoons of the oil to cover the surface of
a baking tray.
Place remaning ingredients in tray in a relatively thin
layer, ( 1 inch ) and spread the remaning oil evenly.
Cover tray with aluminum foil.
Bake for 20-25 minutes, until potatoes are done.
Remove foil and bake 5 more minutes, until the potatoes
start browning a little.
Let it beathe and serve warm.
Makes 4 servings.
You can use parsley and or dill if you like.
