    Potatoes, stewed

    8 medium potatoes
    1 stalk celery, chopped
    1 small onion, chopped
    1 can chicken broth or homemade broth
    2 chicken bouillon cubes
    1/4 cup butter, (1/2 stick)

    Peel and dice potatoes.
    Put potatoes in pot with bouillon cubes and broth. Set aside.
    Saute onion and celery in saucepan with butter.
    Cook until tender.
    Add to potatoes.
    Season with salt and pepper.
    Add water to just cover potatoes; cover and simmer until thickened and
    potatoes are tender
