Rutabaga Au Gratin
4 cups diced rutabaga
1 teaspoon salt
1 teaspoon granulated sugar
2 Taablespoons butter
2 Tablespoons flour
1/4 teaspoon ground black pepper
1 1/4 teaspoons salt
1 1/2 cups milk
3/4 cup grated, sharp Cheddar cheese
2 Tablespoons butter
1 cup soft bread crumbs
Cook rutabaga with 1 teaspoon salt and 1 teaspoon sugar in about
1 inch boiling water for 12 minutes or until tender, drain.
Meanwhile melt 2 tablespoons butter in saucepan. Remove from heat.
Stir in flour, black pepper and 1 1/4 teaspoon salt.
Add milk and blend.
Return to heat and cook stirring until sauce is smooth and thickened.
Stir in cheese.
Arrange rutabaga and cheese sauce in alternate layers in 1 quart
casserole.
Melt remaining 2 tablespoons in small pan.
Stir in bread crumbs to absorb butter.
Sprinkle crumbs atop casserole.
Bake at 350 degrees F. for about 15 minutes or until heated through
and crumbs lightly browned.
Makes 6 servings.
