Rutabaga Puff Casserole
6 cups peeled and diced rutabaga
2 Tablespoons brown sugar
1 cup sour cream
2 Tablespoons unmelted butter, room temperature
1 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 egg yolks, lightly beaten
2 egg whites, beaten until they form stiff peaks
1/3 cup bread crumbs
2 additional Tablespoons butter, melted
Heat oven to 350 degrees F.
Grease ad 2 quart baking dish/casserole.
Cook diced rutabaga, peeled and diced, until very tender.
Mash rutabaga.
Stir in sour cream, unmelted butter, salt, pepper and egg yolks.
Fold the stiffly beaten egg whites into the mixture.
Pour into a baking dish/casserole.
Combine the melted butter with the bread crumbs.
Sprinkle over the top.
Bake for 30 to 40 minutes until well puffed, top is golden brown.
