Scalloped Cabbage w/Tomatoes + Cheese
1 head cabbage, about 1 1/2 to 2 pounds, shredded, about 4 cups cooked
1, 14.5 ounce can diced tomatoes
2 cups soft bread crumbs tossed with 2 tablespoon melted butter
1 cup shredded Cheddar cheese
salt and pepper to taste
Cook cabbage in a small amount of boiling salted water for 10 minutes,
until tender. Drain well.
Butter a baking dish.
Layer cabbage with tomatoes, seasoning each layer with a little salt
and pepper. Sprinkle with cheese and bread crumbs.
Bake at 350 degrees F. for 30 minutes, or until hot and bubbly.
SMakes 4 to 6 servings.
