6 medium potatoes
3 tablespoons + 1 tablespoon butter
...or margarine, separated
1 small chopped onion
3 tablespoons flour
1 teaspoon salt
1/4 teaspoon ground black pepper
2 1/2 cups milk
Heat oven to 350 degrees F. Grease bottom and sides of
a 2 quart casserole with shortening.
Melt the 3 tbsps. butter in a 2 quart saucepan over a
medium heat. Saute onion for about 2 minutes, stirring
occasionally, until tender.
Stir in flour, salt and pepper. Cook, stirring constantly,
until smooth and bubbly; remove from heat.
Stir in milk. Then heat to boiling, stirring constantly.
Boil and stir one minute.
Spread potatoes in casserole. Pour sauce over potatoes.
Dot with the 1 tbsp. butter.
Cover and bake for 30 minutes. Uncover and bake 1 hour
longer, until potatoes are tender. Let stand 5 to 10
minutes before serving.
Makes 6 servings.
