    List of Ingredients




    3 tbsp. I Can't Believe It's Not Butter Light
    3 medium baking potatoes, unpeeled, boiled, and diced
    1 1/4 c. grated Monterey Jack cheese
    1 1/4 c. Cheddar cheese
    1 medium diced tomato
    1 small diced onion
    3 sliced green onions, tops included
    salt and pepper to taste
    1 large diced avocado
    1/2 c. sour cream
    salsa, optional

    Recipe



    Melt the butter in a frying pan over a medium/high heat.
    Add the potatoes and cook until brown and crisp, stirring frequently.
    Add the cheeses and onions and cook until the cheese melts.
    Season with salt and pepper.
    Gently mix in the avocado and tomatoes.
    Remove from heat.
    Serve with sour cream and salsa.
