Spinach Casserole #3, w/brown rice
3/4 cup raw brown rice, cook to package directions
1/2 cup shredded cheddar cheese
2 beaten eggs
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/4 teaspoon pepper
1. 10 ounce package frozen spinach, thaw + squeeze dry
2 tablespoons dry bread crumbs
1 tablespoon melted butter
Preheat oven to 350 degrees F.
Butter a 2 1/2 quart casserole dish.
Combine the rice and cheese together in a medium bowl.
In a another bowl, combine the eggs, parsley, salt and pepper.
Stir the two mixtures together.
Add the spinach and mix.
Pour into the casserole dish.
Stir the bread crumbs and the butter together.
Sprinkle buttered crumbs over the casserole.
Bake for 30 - 35 minutes.
