    Spinach, Cheese + Pepper Stuffed Tomatoes

    Recipe Introduction

    A great way to use the abundance of peppers and tomatoes we tend to have this time of year.

    List of Ingredients

    Spinach, Cheese + Pepper Stuffed Tomatoes

    4 medium tomatoes
    1, 10 ounce package frozen spinach, thawed
    ...and squeezed dry, (no need to cook, will
    ...be cooked later in recipe)
    4 oz. Cheese Whiz
    8 - 10 Ritz crackers
    1/8 tsp. garlic powder
    1/8 tsp. onion powder
    1/4 cup chopped jalapeno pepper, (may
    ...use a sweet bell pepper, if desired)

    Cut tops off of tomatoes, and scoop out inside of tomato.
    Make sure all excess water is out of the spinach, may blot
    with paper towels.
    Mix together Cheese Whiz, jalapeno, garlic and onion powder.
    Microwave for 30 seconds. Add spinach and mix well.
    Scoop mixture into each of the tomatoes.
    Crumble Ritz crackers on top (gives it a buttery flavor).
    Preheat oven to 400 degrees.
    Bake for 20-25 minutes (uncovered).

    These are a great substitute for baked potato; and go with
    anything and you can serve it with the scooped out tomato
    pieces too!

    Notes:
    You may substitute cheddar or Monterey Jack, grated, for
    the Cheese Whiz; fresh spinach for the frozen; any kind
    of bread crumb, corn flake, cracker topping for the Ritz.
