Squash Casserole #1
6 cups yellow or zucchini squash, chopped
1/4 cup chopped onion
1, 10 3/4 ounce can cream of chicken soup
1 cup sour cream
1 cup shredded carrot
1, 8 ounce package herb stuffing mix
1/2 cup melted butter
Cook squash and onion about 5 minutes, drain.
Combine soup, sour cream, and carrots,
Fold in drained squash and onion.
Combine stuffing mix and butter.
Spread 1/2 of the stuffing into 12 x 8 x 2 inch pan.
Spoon vegetable mix over top.
Cover with rest of stuffing.
Bake at 350 degrees F. for 30 minutes.
This may be served as a main dish or side dish.
