    Squash + Red Pepper Stir Fry

    Squash + Red Pepper Stir Fry

    3 cups squash (yellow or zucchini), cut in strips
    1/2 medium red peppers, cut in strips
    1 small onion, cut in strips
    2 teaspoon oil
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper

    In large bowl, combine vegetables.
    Heat large skillet over medium heat until hot.
    Add oil, heat until ripples.
    Add vegetables, stir fry 5 to 6 minutes or
    until crisp tender.
    Season with salt and pepper.
