    Stewed Cucumbers + Tomatoes

    May be served as a side dish, or over cooked rice as a main course.

    Stewed Cucumbers + Tomatoes

    2 tbsp. Canola oil
    3 - 4 chopped garlic cloves
    1 c. chopped onion
    1 chopped red bell pepper
    4 medium cucumbers, seeded and cut into 1" pieces
    2 c. chopped ripe tomatoes
    1/4 tsp. sugar
    salt and pepper to taste
    1 tsp. fresh lime juice
    1/4 c. chopped scallions

    In a large, non reactive saucepan, heat the oil over a medium heat.
    Add the garlic, onion, and red bell pepper and saute until just soft.
    Add the cucumber, tomatoes, sugar, and salt and pepper.
    Stir well to combine.
    Simmer until the cucumbers are just translucent.
    Add the lime juice and scallions. Stir and taste.
    Add more salt and pepper, if desired.
    Makes 2 - 4 servings.
