    Stir Fried Eggplant

    3 medium eggplants/brinjals (not the round ones but the long variety,
    about 8-12 inches and bright purple)
    3 slivers chopped garlic (quantity depends on your taste)
    2-3 teaspoons chopped dried salted shrimp (from asian store)
    1 to 2 teaspoons oyster sauce
    dash of vinegar
    Garnishing and extra taste: Chopped coriander (not fine, but about 1
    inch lengths)

    Cooking
    Cut brinjals in half lengthwise, then into 2-inch pieces. Heat oil in
    stir-fry non-stick pan, stir-fry garlic until fragrant then remove. In
    same pan, stir-fry shrimp in same oil until fragrant and golden crispy.
    Add garlic and brinjals, fry until eggplants are soft. Eggplant should
    emit some liquid, if not add about two tablespoons of water to soften
    eggplant. Add oyster sauce and dash of vinegar. Add coriander and remove
    immediately. This dish should be on the dry side with a little moisture,
    not swimming in sauce. It is important to keep the ingredients moving in
    the pan to avoid burning the chopped ingredients.
