Sweet + Sour Bacon Potatoes, fried
2 1/2 to 3 cups diced white potatoes
4 slices bacon, fried crisp, drained, crumbled,
...2 tablespoons of grease saved
1/4 cup finely chopped onion
3/4 teaspoon salt
1/2 cup water
1/4 cup granulated white sugar
1/4 cup vinegar
Cook potatoes in the grease, with a medium heat, for
15 to 20 minutes, until browned on bottom. Do not turn.
Flip over. Add onion, and cook another 5 minutes. Stir
in salt and water. Simmer until potatoes are tender,
about 15 minutes. Remove from heat. Add sugar and vinegar.
Cover and let set 15 minutes. Add bacon and reheat to
serve hot. Makes 6 servings.
