Tomato Pie
1, 9 inch pie crust
4 tomatoes, peeled and chopped
basil and oregano (preferably fresh)
black pepper
1/2 cup mayonnaise
1/3 cup chopped onion
2 cups grated Sharp cheese
Bake pie crust until almost done.
Drain tomatoes.
Combine mayonnaise, onion and cheese.
(This will not look like enough
mayonnaise, but do not add more.)
Place tomatoes in pie shell.
Top liberally with basil, oregano and pepper.
Spread with cheese mixture.
Bake at 350 for 30 to 35 minutes.
