This is a great way to use surplus tomatoes.
It is tasty served warm or cold.

9 inch pie crust
1 thinly sliced yellow onion, separated into rings
7 sliced ripe tomatoes
ground black pepper to taste
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
1/3 cup shredded Mozzarella cheese
1/3 cup freshly grated Parmesan cheese
3/4 cup mayonnaise
Preheat oven to 350 degrees F.
Bake the crust for 8 - 10 minutes or until browned.
Place the onion rings in the bottom of the crust.
Place the tomatoes over top of the onion rings.
Sprinkle with the pepper, basil and oregano. Set aside.
Use a medium bowl to combine the cheeses and mayonnaise.
Spread evenly over top of the tomatoes.
Bake for 20 - 25 minutes or until golden brown.
Makes 8 servings.
