Vidalia Onion Custard

4 large Vidalia onions, halved and thinly sliced, or 6 medium
4 tbsp. butter
1 c. milk
2 large eggs
1 egg yolk
1 tsp. salt
1/4 tsp. ground nutmeg
pepper, to taste
chopped chives or minced green onion for garnish Recipe
Preheat oven to 325. Butter well a 1 1/2 quart baking dish or deep dish pie plate.
Saute the onions in the butter, until soft and golden in color. Stir occasionally.
Let onions cool down to room temperature.
In a large bowl, whisk together milk, eggs and egg yolk, salt, nutmeg and pepper. Add the onions and stir well.
Pour into baking dish and bake for 40 - 50 minutes, until knife inserted in center comes out clean. Should be lightly golden.
Sprinkle with chives or green onion.
Serve hot.
Makes 4 servings.
