3 - 4 large yams
1 cup granulated white sugar
1/2 cup firmly packed brown sugar
1 - 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 cup lemon juice
1/2 cup butter, (1 stick)
pineapple slices; optional
Cut yams in thin slices.
Place in shallow baking dish.
In mixing bowl, mix sugars, cinnamonsalt, and lemon juice.
Sprinkle over yams.
Slice butter and lay over sugar mixture.
Cover and bake at 325 degrees F. for 45 minutes or until
yams are tender and syrup is desired thickness.
Garnish with pineapple.
