Zucchini Pancakes

Zucchini Pancakes
2 eggs
1/2 cup milk
1 teaspoon salt and pepper
2/3 cup flour
1/3 cup freshly grated Parmesan cheese
1 medium washed zucchini, unpeeled,
...thinly sliced round way
Beat the eggs and milk together. Add flour, salt, pepper
and cheese and stir well. Add the zucchini slices to the
mixture. Fry on a skillet with a little oil, (just as you
would those silver dollar pancakes)
Notes:
- Make them any size you want, but some people think
smaller is better.
- Also try adding more zucchini to this, if you want.
