Zucchini Provencale
1 medium onion, sliced
1 clove garlic, minced
1/4 cup salad oil
1 large zucchini, sliced
4 tomatoes, cut up
1 chopped green pepper
salt and pepper to taste
In skillet, saute onion and garlic in salad oil. Add zucchini, tomatoes
and green pepper. Salt and pepper to taste. Cook until tender. Sprinkle
with minced parsley and Parmesan cheese before serving.
