Pennsylvania Dutch Whoopie Pies
2 cups granulated white sugar
1 cup shortening
2 eggs
4 cups flour
1 cup baking cocoa powder
2 teaspoons vanilla
1 teaspoon salt
1 cup sour milk
2 teaspoons baking soda
1 cup hot water
Heat oven to 400 degrees F.
Cream sugar and shortening together.
Add eggs, blending well.
Sift together flour, cocoa, and salt.
Stir into creamed mixture alternately with sour milk.
Add vanilla.
Dissolve soda in hot water and add last. Mix well.
Drop by rounded teaspoonfuls onto cookie sheet.
Bake for 8 - 10 minutes.
Let cool.
filling:
2 egg whites, beaten
4 Tablespoons whole milk
2 teaspoons vanilla
4 cups powdered confectioners sugar (10x)
1 1/2 cups shortening
Mix together egg whites, milk, vanilla and 2 cups of sugar.
Beat in the shortening and remaining 2 cups of sugar.
Spread a dab of filling on the flat side of the cooled cookie.
Top with another cookie to form a sandwich pie.
