    Zucchini Whoopie Pies w/cream cheese filling

    for the cookie:
    1 cup granulated white sugar
    1 cup grated zucchini
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 cup vegetable shortening
    1 egg
    2 cups flour
    1 teaspoon ground cinnamon
    1/2 teaspoon cloves
    1 teaspoon salt
    1/2 cup milk
    1 teaspoon vanilla
    1 cup chopped walnuts, optional

    for the filling:
    7 ounces cream cheese, softened
    3 Tablespoons BUTTER
    1 pound powdered confectioners sugar
    2 teaspoons vanilla

    for the cookie:
    Heat oven to 375 degrees F.
    Lightly grease baking pan(s).
    Mix together zucchini, sugar, baking soda, baking powder, shortening,
    and egg together.
    Sift dry ingredients together and add alternately with the milk until
    combined soothly. Stir in the vanilla and nuts.
    Drop by tablespoon fulls on to baking sheet.
    Bake for 9 to 10 minutes.
    for the filling:
    Combine ingredients until smooth and creamy.
    Put a dollop on the flat side of 1/2 the cookies.
    Place another cookie, flat side down on top and press to make
    sure the filling reaches the edge.
