venison - 3 Day Marinated Venison Roast

Recipe Introduction
This is one of the most deliciously flavored venison roasts you'll everprepare.
List of Ingredients
1 cup wine vinegar
1 teaspoon whole allspice
1 cup water
1 teaspoon white granulated sugar
1/2 teaspoon salt
1 large sliced onion
1/4 chopped garlic clove
1, 5 - 6 pound venison roast
flour
bacon fat
Recipe
Mix the vinegar, allspice, water, sugar, salt, onion and garlic, to boiling.
This is a marinade; set aside.
Place roast in a very deep glass or pottery pan.
Pour the marinade over roast.
Cover and refrigerate overnight.
The next day, turn the roast over to marinate other half.
Refrigerate overnight again.
On the 3rd day, remove the roast.
Strain marinade and set aside.
Pat dry and coat in flour.
Brown in bacon fat.
Add 1/2 cup or more of the marinade for moisture and cook until tender,
adding more marinade when needed.
