Watermelon Granita

List of Ingredients
- 200g caster sugar
- juice of two limes
- 250ml (1 cup) watermelon pulp
- lemon or lime wedges to serve (optional)
Instructions
- Combine sugar and 3 cups of water in a pan, and bring to the boil, stiring until the sugar is disolved. Simmer for 5 minutes, remove from heat, add lime juice and cool.
- Place watermelon pieces in a food processor and process until smooth.
- Add sugar syrup to the watermelon. Pour in a freezer-proof dish and place in the freezer for 1 hour. Scrape with a fork until the mixture is flaky and return to the freezer for another 2 hours or until frozen.
- To serve, mash granita with a fork and serve in chilled glasses with wedges of lemon or lime, if desired.
