Grilled Apricots with Cream

This is a great recipe for an fast and easy dessert.
List of Ingredients
- 8 small apricots, halved and stoned
- 2 tablespoons brown sugar
- 1/2 cup of double cream
Instructions
- Place apricot halves on a foil-lined tray.
- Sprinkle liberally with sugar and place under a hot grill. Cook for 8-10 minutes until well caramelised.
- Serve warm topped with a spoonful of double cream.
Final Comments
If you are using canned apricots, strain the fruit and sit on absorbent paper for 20 minutes before grilling. This will prevent the apricots from collapsing once cooked.
