Lemon Mousse

- 3 eggs
- 6 oz caster sugar
- 2 lemons (juice and rind)
- 3 tablespoons hot water
- 2 tablespoons gelatin powder
- 1/2 pint whipping cream
Instructions
- Grate the lemon zest and squeeze out the juice into a bowl.
- Seperate the eggs and add the egg yolks to half the sugar.
- Whisk the egg yolk/sugar mixture until it is creamy, and becomes a pale yellow colour.
- Using a clean bowl, whisk the egg whites, adding the rest of the sugar as you go. Whisk the mixture until it becomes very stiff and firm peaks form.
- Add the egg yolks to the egg whites.
- Whip the cream and add to the other mixture, folding them together.
- Place three tablespoons of hot boiled water in a cup and then sprinkle the gelatin on top. Stir until dissolved.
- Pour the lemon zest and juice into the gelatin solution and stir again.
- FOld the lemon and gelatin mixture gently into the souffle mixture.
- Pour into individual serving glasses and refrigerate for at least 4 hours.
