- 1 cup plain flour
- 1 tablespoon soft mix icing sugar
- 75g butter, cubed
- 1 tablespoon ice cold water
- 2 eggs
- 1/4 cup of sugar
- 1/3 cup thickened cream
- 1 lemon, finely grated
- 1/4 cup lemon juice
Instructions
- Preheat oven to 200 celsius (or 180 if fan forced oven).
- Combine plain flour, icing sugar and butter in a food processor. Process until mixture forms breadcrumbs. Add water until the mixture comes together. Add water and process until mixture comes together. You may need to add a little more water.
- Roll out pastry between two sheets of glad wrap or glad bake. Place in the fridge to let the pastry rest for 10-15 minutes.
- Price base of pastry with a fork. Place pastry in either a flat tin or pie tin etc. Bake for about 15 minutes. Leave to cool.
- Reduce the oven to 180 celsius.
- Whisk together eggs, sugar, cream, lemon rind and juice until smooth. Pour mixture into pastry case.
- Bake in oven for 15 to 20 minutes until mixture is just set. Leave to cool. Dust with icing sugar and cut into wedges.
