List of Ingredients
- 2 small eggplants (460g)
- 1/3 cup low-fat plain yoghurt
- 1 tablespoon lemon juice
- 2 cloves crushed garlic
- 1 teaspoon tahini
- 1 teaspoon ground cumin
- 1/2 teaspoon sesame oil
- 2 tablespoons finely chopped fresh coriander leaves
Instructions
- Halve eggplant lengthways. Place on oven tray, and bake in a moderate oven for about 35 minutes until tender.
- Cool. Remove and discard the skin. Blend or process eggplant with remaining ingredients until smooth.
- Cover, and refrigerate for about 30 minutes.
Final Comments
Can be made 3 days ahead and refrigerated.
