    List of Ingredients


    • 2 small eggplants (460g)
    • 1/3 cup low-fat plain yoghurt
    • 1 tablespoon lemon juice
    • 2 cloves crushed garlic
    • 1 teaspoon tahini
    • 1 teaspoon ground cumin
    • 1/2 teaspoon sesame oil
    • 2 tablespoons finely chopped fresh coriander leaves


    Instructions


    1. Halve eggplant lengthways. Place on oven tray, and bake in a moderate oven for about 35 minutes until tender.
    2. Cool. Remove and discard the skin. Blend or process eggplant with remaining ingredients until smooth.
    3. Cover, and refrigerate for about 30 minutes.


    Final Comments


    Can be made 3 days ahead and refrigerated.
