Satay chicken

List of Ingredients
- 750g diced chicken breast
- 1 tablespoon oil
- 1 chopped brown onion
- 125g (1 cup) crunchy peanut butter
- 80 ml (1/3 cup) chicken stock
- 2 gloves garlic
- 2 tablespoons fruit chutney (reddish)
- 3 teaspoons of red curry paste (eg madras)
- 2 teaspoons soy sauce
Instructions
- Cook onions in oil. Put everything, other than chicken, into a food processor until sauce is smooth.
- Cook chicken in wok, then add sauce. Cook until chicken tender.
Final Comments
Serve with rice.
