    List of Ingredients


    • 750g diced chicken breast
    • 1 tablespoon oil
    • 1 chopped brown onion
    • 125g (1 cup) crunchy peanut butter
    • 80 ml (1/3 cup) chicken stock
    • 2 gloves garlic
    • 2 tablespoons fruit chutney (reddish)
    • 3 teaspoons of red curry paste (eg madras)
    • 2 teaspoons soy sauce


    Instructions


    1. Cook onions in oil. Put everything, other than chicken, into a food processor until sauce is smooth.
    2. Cook chicken in wok, then add sauce. Cook until chicken tender.


    Final Comments


    Serve with rice.
