    Savory Potato Cakes

    List of Ingredients


    • 750g peeled potatoes
    • 4 rashers of bacon, derinded and finely chopped
    • 1/3 cup of plain flour
    • 2 tablespoons fresh chives
    • salt and pepper
    • diced onion
    • optional: grated cheddar cheese
    • optional: vegetables, e.g cooked peas and corn


    Instructions


    1. Cook potatoes in boiling salted water until tender. Drain well. Mash until smooth with salt and pepper

    2. Cook the bacon in a frying pan. Remove the bacon, when cooked, but retain the fat in the pan.

    3. Beat the flour into the potatoes and mix in the chives and bacon

    4. Pat out onto a floured surface until 1cm thick. Cut into rounds with a pastry cutter

    5. Heat the bacon fat in the pan. Add the potato cakes and cook over a medium heat for 2 minutes on each side (until golden brown).
