Savory Potato Cakes

- 750g peeled potatoes
- 4 rashers of bacon, derinded and finely chopped
- 1/3 cup of plain flour
- 2 tablespoons fresh chives
- salt and pepper
- diced onion
- optional: grated cheddar cheese
- optional: vegetables, e.g cooked peas and corn
Instructions
- Cook potatoes in boiling salted water until tender. Drain well. Mash until smooth with salt and pepper
- Cook the bacon in a frying pan. Remove the bacon, when cooked, but retain the fat in the pan.
- Beat the flour into the potatoes and mix in the chives and bacon
- Pat out onto a floured surface until 1cm thick. Cut into rounds with a pastry cutter
- Heat the bacon fat in the pan. Add the potato cakes and cook over a medium heat for 2 minutes on each side (until golden brown).
