Lemon and Coriander Chicken

List of Ingredients
- 1/4 cup grated ginger
- 2 cloves garlic, minced
- 80ml (1/3 cup) vegetable oil
- 750g chicken breast fillets, cut into pieces
- 1/2 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 250ml chicken stock
- 1/2 cup lemon juice
- 1 bunch coriander, chopped
- steamed rice, to serve
Instructions
- Place ginger, garlic and 1/4 cup water into a food processor and grind until a thick paste forms.
- In a large pan, heat oil and brown the chicken pieces on each side until well sealed. Remove from the pan.
- Reheat remaining oil in the pan, add ginger paste, and cook for 1 minute until fragrant.
- Add the turmeric, cumin, and ground coriander and cook for another minute.
- Return chicken to pan and coat well in the spices for 30 seconds. Add stock, lemon juice and chopped coriander. Season to taste.
- Simmer for 10-15 minutes until chicken is tender
- Serve with steamed rice.
