    Lemon and Coriander Chicken

    List of Ingredients


    • 1/4 cup grated ginger
    • 2 cloves garlic, minced
    • 80ml (1/3 cup) vegetable oil
    • 750g chicken breast fillets, cut into pieces
    • 1/2 teaspoon ground turmeric
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 250ml chicken stock
    • 1/2 cup lemon juice
    • 1 bunch coriander, chopped
    • steamed rice, to serve


    Instructions


    1. Place ginger, garlic and 1/4 cup water into a food processor and grind until a thick paste forms.
    2. In a large pan, heat oil and brown the chicken pieces on each side until well sealed. Remove from the pan.
    3. Reheat remaining oil in the pan, add ginger paste, and cook for 1 minute until fragrant.
    4. Add the turmeric, cumin, and ground coriander and cook for another minute.
    5. Return chicken to pan and coat well in the spices for 30 seconds. Add stock, lemon juice and chopped coriander. Season to taste.
    6. Simmer for 10-15 minutes until chicken is tender
    7. Serve with steamed rice.
