    Recipe Introduction


    You can fill these with whatever you like. A nice bolognaise sauce is a great filling.


    List of Ingredients


    • 2 cups of rice
    • 1 egg, lightly beaten
    • 1 egg yolk
    • 1/2 cup of grated parmesan cheese
    • any filling, such as Italian bolognaise sauce.
    • plain flour
    • 2 eggs, lightly beaten
    • dry breadcrumbs.


    Instructions


    1. Cook the rice until soft. Drain and cool.
    2. Place in a large bowl with the egg, egg yolk and parmesan. Stir until the rice sticks together.
    3. With wet hands, form the rice mixture into 10 large balls. Wet hands again, and pull balls apart.
    4. Place 3 heaped teaspoons of your chosen sauce into the centre of each rice ball. Remould to enclose the filling.
    5. Roll each ball in flour, beaten egg and breadcrumbs. Chill for one hour.
    6. Deep fry the croquettes in hot oil until golden brown. Drain on paper towels, and serve while hot, on a bed of your chosen sauce.
