Arancini (Rice Croquettes)

Recipe Introduction
You can fill these with whatever you like. A nice bolognaise sauce is a great filling.
List of Ingredients
- 2 cups of rice
- 1 egg, lightly beaten
- 1 egg yolk
- 1/2 cup of grated parmesan cheese
- any filling, such as Italian bolognaise sauce.
- plain flour
- 2 eggs, lightly beaten
- dry breadcrumbs.
Instructions
- Cook the rice until soft. Drain and cool.
- Place in a large bowl with the egg, egg yolk and parmesan. Stir until the rice sticks together.
- With wet hands, form the rice mixture into 10 large balls. Wet hands again, and pull balls apart.
- Place 3 heaped teaspoons of your chosen sauce into the centre of each rice ball. Remould to enclose the filling.
- Roll each ball in flour, beaten egg and breadcrumbs. Chill for one hour.
- Deep fry the croquettes in hot oil until golden brown. Drain on paper towels, and serve while hot, on a bed of your chosen sauce.
