Couscous Salad

Recipe Introduction
Couscous is staple in North African cooking. Coucous is a type of tiny pasta made from semolina (ground from duram wheat).
This recipe is a good alternative to fried rice.
List of Ingredients
- couscous
- chicken stock
- sweet corn
- capsicum
- peas
Instructions
- Put coucous in a bowl, and cover with a sufficient amount of chicken stock. Leave to soak for 30 minutes until plump. Fluff with a fork.
- Lightly fry diced capsicum, corn, peas, spring onions, (you may wish to add other vegetables, such as zucchini, carrot etc).
- Mix with prepared couscous and serve cold.
