Basic scones

- 2 cups of self raising flour
- 2 teaspoons sugar
- 15g butter
- 1 cup milk (approximately)
Instructions
- Sift flour and sugar into medium bowl. Rub butter in, using your fingertips
- Make well in centre and add milk.
- Using a knife, cut the milk through the flour mixture to mix to a soft sticky dough. Add remaining milk only if mixture is too dry
- Place dough onto a lightly floured surface. Knead lightly until smooth.
- Roll, or press, out dough to approximately 2cm thickness. Cut scones into rounds.
- Place scones side by side, just touching, in a lightly greased pan.
- Brush tops of the scones with a little extra milk. Bake in a very hot oven for about 15 minutes, or until tops are brown.
- Serve while hot, with jam and whipped cream.
