    List of Ingredients


    • 750g pumpkin (pref butternut)
    • 2 onions, chopped
    • 500ml water and 1-2 vegetable or chicken stock cubes
    • 1/4 cup cream
    • 1/4 teaspoon nutmeg
    • salt and pepper
    • 2 cloves garlic


    Instructions


    1. Boil water and stock
    2. Add small pieces of pumpkin (skin and seeds removed), onions and garlic
    3. Bring to boil. Reduce heat, cover and simmer until pumpkin is soft
    4. Drain liquid from vegetable and reserve
    5. Puree vegetables in food processor (you may need to add some of the reserved liquid)
    6. Return to saucepan, add some of the reserved liquid to get to desired consistency
    7. Add cream. Heat but do not boil.


    Final Comments


    Serve with parmesan crutons (see recipe).
