Pumpkin Soup

List of Ingredients
- 750g pumpkin (pref butternut)
- 2 onions, chopped
- 500ml water and 1-2 vegetable or chicken stock cubes
- 1/4 cup cream
- 1/4 teaspoon nutmeg
- salt and pepper
- 2 cloves garlic
Instructions
- Boil water and stock
- Add small pieces of pumpkin (skin and seeds removed), onions and garlic
- Bring to boil. Reduce heat, cover and simmer until pumpkin is soft
- Drain liquid from vegetable and reserve
- Puree vegetables in food processor (you may need to add some of the reserved liquid)
- Return to saucepan, add some of the reserved liquid to get to desired consistency
- Add cream. Heat but do not boil.
Final Comments
Serve with parmesan crutons (see recipe).
